My name is Becky Eckenfels. I am a mom. I am a wife. I am a perfectionist. I am a dreamer. I am a wanderer. I am an adventurer. A lover of books. A lover of music. A lover of oceans. A lover of sunshine. A lover of food….with a catch….I have Celiac’s disease, and so do my two incredible daughters. Meaning we have to stay away from Tiramisu in Italy, Pizza in New York, Baklava in Turkey, Gyros in Greece. You get the picture….or do we? With more knowledge out there everyday about gluten free cooking, there are more and more Gluten free versions of those delicacies.
One thing that has always been a part of me for as long as I can remember is my fascination with travel. So much so, that six years ago I got my certification to become a home based travel agent and I can honestly say, I LOVE MY JOB!! I can pinpoint when my addiction started to the first flight I took with my younger sister when I was eight, and she was four. No parents, just the two of us….TOTAL FREEDOM!!! We were independent “little women”, traveling across the globe (or from California to Arizona, but do we really need to get technical here?) on an adventure all our own. I was hooked. I needed more!!!
So What Did I Do??
I started saving, and planning, and saving my money for when I turned 18. I had my heart set on Australia. It’s all I could think about, and then….. I was offered an incredible opportunity to go to Ireland and England instead. What could I say? I had the money. I just had to readjust my thinking, change my mindset and be flexible. I was going to IRELAND!!! I mean how could that not be a completely awesome adventure!! And it was L-I-F-E C-H-A-N-G-I-N-G!!! There was an entire world to be discovered outside of my Montana home. Who knew? A world full of people with different customs, beliefs, food, clothes, and languages….a completely different way to look at the world. And that is when my obsession with world travel began. I crave the feeling of discovering a new country, not knowing the language, not even hearing my own language, and still finding a place that I belong.
Two awesome little people came into our lives and changed our world forever. I love seeing the world through their eyes. I love seeing them open up to trying new things. I learn so much from traveling with them, and they have made every adventure that much better with their huge grins and laughs. I can’t wait for future adventures with them!!
How does someone who LOVES to travel but has to be so careful about what she eats travel the world? And how does that work with kids who also have Celiac’s? I hope I can help you see that you do NOT need to give up on your travel dreams. You just have to get creative, do your research, and make a plan, Plan, PLAN. My family is in our ninth year of eating gluten-free, and it was a HUGE struggle at first. I thought we would never eat again. I thought our traveling days were over, but trust me, it does get easier, and a little crazy at times, but I learn something new on each new adventure.
